Kathrikai Murungaikai poriyal (Brinjal and Drumstick subji)

Baby brinjals – 1/2 KG
Drumsticks – 2
Garlic pods – 10
Sambar podi – 2 tspn
Salt – as per taste
Turmeric powder – 1/4 tspn
Gingelly oil – 5 table spoons

Cut baby brinjals lengthwise into 2 or 4 depending upon the size. Cut the drumsticks into 3 inch peices. In a wide skillet pour 5 table spoon of gingelly oil and let it heat up. Once hot add the garlic pods and fry till golden brown. Be careful and do not burn the garlic. Add the brinjal pieces and now make the flame medium low and cook it in the oil till the brinjals shrink. Now add the sambar podi, turmeric and salt and cook for 30 seconds. Add the drumsticks and fry turning the veggies carefully for 30-40 seconds. Now add 1 cup of water and cover the vessel and simmer it off till the oil separates.
This dish will be in a gravy consistency. Serve it with rice or roti. To my knowledge this tastes best with rice and rasam. This is a very good food when you get back from a fever or cold.

And here’s the poriyal…

And this is my contribution for JFI – July – Brinjal  organized by lovely Sangeeta.
